Soup’s On

Tonight I decided to make some soup! I kind of just put stuff together hoping it would turn out well… it did!

First I sautéed 1 carrot and 1 parsnip with I white onion and 2 cloves garlic in ½ tbsp EVOO. Once they veggies were softened up I added 14 oz butternut squash soup and 14 oz chicken broth. I let it all simmer for about 10 minutes and then added ¾ cup butter beans and 1 tsp garlic/onion powder seasoning. I then took my immersion blender and blended it all together leaving a few chunks. It was quick and easy and it tasted fabulous. I paired my soup with a slice of sprouted 16 grain bread w/ some Earth Balance spread. It wasn’t a large meal so I’m sure I will be hungry in a bit. Afternoon Goodies

It has been a busy afternoon! I have been busy cleaning and baking since Sienna left. I made some awesome oatmeal chocolate chip cookies based on Veggiegirls recipe (find that here), I subbed agave nectar for brown rice syrup and ¼ cup chocolate chips for the dried fruit. They turned out fabulous! I had 2 for my first afternoon snack.

I kind of craved another cookie but I really didn’t need one so I decided to make some tea. Ginger-honey green tea was the flavor of the day! I added a touch of almond milk.

A few hours later I was hungry again! So I made myself a little smoothie with my amazing Bamix immersion blender. I used about a cup of frozen raspberries, a cup unsweetened almond milk and ¼ cup plain non fat yogurt. I’m sipping it as I type and it is totally reminding me of summer! I hope everyone’s afternoon is going well, I’m going to go do some stretches- my muscles are feeling a bit tight!

Healthy Food- Quick Style

I am such a hungry girl! Around 10 I started to get hungry again so I decided to have some skim milk to hold me over until lunch. It did an OK job- I ate lunch around 12.

For lunch I used all convenience foods! I didn’t even realize until after I made it. Canned beans, frozen butternut squash and bagged spinach! The meal turned out really well. I used another one of my wraps and added some mashed butter beans (w/ EVOO and some spices), mashed butternut squash, Parmesan cheese, and baby spinach. I also had a red pear on the side. It was a really good lunch, and more relaxing than usual. Sienna is off at my mom’s for the day which means cleaning and cooking for me! I’m going to roast a spaghetti squash and bake some cookies in a bit… it can be difficult to bake when Sienna’s around. She always seems to want to eat within a few minutes of the oven timer going off!

Switching It Up

I have been having hot cereal a lot these days (oatmeal, quinoa flakes, multi-grain…) because it’s so cold! I also really like eating them because it is so easy to switch up the toppings! But today I decided to eat something different… I had TOAST. I love bread! I also had a pink lady apple on the side and vanilla hemp milk to wash it down.

I did a topping most people probably wouldn’t think of, I read about it a looong time ago. I don’t even remember where but it is really good! I toasted my 16 grain sprouted bread and topped it with some raw honey. Then I added 1 tsp Udo 3-6-9 oil to each slice (just drizzle it on) and finished it off with some cinnamon (a twist on cinnamon toast). OMG it is so good! It was full of good for you fats, enzymes from the raw honey and it has been said that seasoning a high carb food with cinnamon can help lessen its impact on your blood sugar levels… sounds good to me!

Ice Cream!

So I know I said it was like 50 below zero here in Calgary buut I still decided to have some ice cream! I found pumpkin flavored at one of my local health food stores and I had to have it! Its actually from a local ice cream shop in Cochrane (just outside of Calgary). YUM
