Good morning! I hope everyones day is off to a great start. Spring is in the air!
This morning I had overnight oatmeal- I put 1/2 oats and 1/2 almond milk in a bowl and left it overnight in the refrigerator. In the morning I had oatmeal to go! You can heat it up or leave it cold, I choose the latter. Its a nice way to have oatmeal in warmer weather.
I topped my oats with fresh strawberries and banana, a few crushed pecans and a drizzle of agave nectar.

I also had white tea.

I’m going shopping with my mom today to get Sienna some new clothes- she grows so fast! We basically have to buy her a new wardrobe every 3 months! Lucky Girl.
Hopefully I’ll also get some baking in today… I’m thinking muffins??

So I made some steel cut oats this morning and when I took it of the burner I accidentally turned it to “max” instead of off. Well I left the oats to sit of a minute while I answered the phone and a few minutes later the smoke alarm went off! It scared the living day lights of out me! Not to mention Sienna was having a nap and I was worried it would wake her up (isn’t that what alarms are suppose to do?). Luckily she didn’t… what an ordeal!
On to breakfast- I started with a cup of green tea (I have had 2 this morning) some greens+ mixed with water. Isn’t it a neat picture? You can see the steam!

And of course I had steel cut oats made with unsweetened almond milk which I topped with 1/2 a banana (I ate the other half as is), walnuts, flax, and some cashew butter.

Today is grocery day so we have basically have no fresh produce- my meals might not be too exciting! But I do plan on posting our grocery shop! See you for lunch!

So yet again I am apologizing for the lack of posting. Sienna has been working me hard these past few days. She is on the move! Not quite crawling but with the rolling and creeping she can defiantly move! Needless to say- I have to constantly be watching her! Any time I have a free moment I generally have 10 million things to do (like take a shower!) so blogging gets pushed aside. I’m going to work on keeping it up!
Thanks to everyone who gave me ideas/tips on how to cut my grocery budget. I find just bringing a calculator and adding as you put things in the cart really helps! Unfortunately it means trying less fun products and getting more “staples” to cook and bake with so I actually have to make things to eat! I actually like this- its nice to have things like homemade soup and cookies on hand.
On to breakfast- this morning I tried something out. I had a fruit and nut plate to start my day (since fruit should really either be eaten alone or with nuts). I had one banana, one apple (small), 1/3 cup raw walnuts and after I took the picture I added some cinnamon! It was so good! The fruit were perfect and went so well with the nuts- the cinnamon really enhanced the flavors. I will defiantly be doing this more often.

I also had a bowl of oatmeal made with almond milk about an hour or so after my fruit plate.

Sorry about the lack of posting- I’ve just been busy!
For breakfast today I just had two slices of sprouted grain toast with some cashew butter.

I also had an orange.

Nothing fancy! We really have to cut back on the amount of money we spend on groceries- its hard because I love food!! I’ve decided I will cook 3 meals for 4 people so that we have left overs and I will bake 1-2 times per week. If you have any money saving tips feel free to let me know!

Sorry about yesterday’s post- it is updated now!! Sienna was monkey last night and woke up and stayed awake at 4 am- she eventually went back to sleep at 630 so everyone slept in late this morning.
I woke up for the day around 8 and had half a banana (again!) w/ almond butter and wheat germ.

A bit later I had the rest of my Blueberry Carob pancakes- I’m going to have to make a new batch of pancakes now! I really like having some in the freezer. I had 5 small ones w/ Earth Balance, pear, maple syrup, and walnuts. It was probably the best way I’ve eaten them- the taste combo rocked!
