Today’s a rare day guys- its February 29! I can’t help but think of all the women giving birth today.. it’s kind of a confusing birthday for their kids! =) Today I had left over Blueberry Carob Pancakes from yesterday- they were still great!
But first I had 1/2 a huge banana w/ almond butter when I woke up.

Then I toasted some pancakes and ate them with some almond butter dip (almond butter, soy yogurt, applesauce, agave nectar, cinnamon- inspired by ED&BV’s cashew dip). I also had an apple that I also dipped in the sauce.

For lunch I had more leftovers- the Sweet Potato Chili I made from ED&BV. I topped it with 1/4 an avocado again and had Mary’s crackers on the side.

I also had cucumber and 1/2 a yellow pepper w/ dijion tarragon dressing.

For a sanck I had one of each cookies that I made. Plus a glass of DHA Silk soy milk.

Darren wasn’t home for dinner (he works one night a week serving) so I just had left over Goddess Gorbanzos w/ a slice of sprouted grain toast and Pacific’s Creamy Roasted Carrot soup. I also made roasted broccoli (olive oil and fresh garlic)- I love roasted veggies!!

I had 2 more Super Charge Me! Cookies for dessert w/ almond milk. I just love cookies…. =)

So it seems that it is easier for me to just do 2 posts a day as opposed to 3. If I can do 3 I will but if you don’t see an updated post around lunch time expect it at dinner! =)
On to the rest of the day….
For a mid morning snack I had a Chocolate Mint Melty cookie and a glass of plain hempmilk.

Lunch was more Goddess Gorbanozs with a toasted sprouted grain tortilla broken up (like home made tortilla chips- I sprayed it with canola oil and sprinkled on salt) and 1/2 a cucumber!

When Sienna went down for a nap I had the urge to bake… again. So instead of doing the chores I should have been doing I made Super-Charge Me! Cookies from ED&BV. Of course they turned out great! I had one fresh out of the oven… and one or two more later on… =D

I desperately wanted to eat cookies all afternoon but of course that wouldn’t be the best thing to do… so I also had a mango as well.

For dinner I made yet another ED&BV recipe- the Sweet Potato Lentil Chili. Wow, it was awesome! It was so full of flavor- the best chili I have ever had and it didn’t even have any meat (or mock meat). I topped mine with 1/4 an avocado.

I also made some garlic toast for dippin (sprouted grain toast, garlic, Earth Balance and salt). One slice of toast for me and one slice for Darren.

For dessert I had one more cookie….

Sorry for the late post- after I ate lunch Sienna woke up from her nap and we went to my mom’s. I didn’t have time to blog! When I got home I made dinner and then Darren’s mom came over- I took the opportunity to bake cookies!
Lets start with my mid morning snack- I had 1/4 cup walnuts. I also had a “greens” drink w/ a bit of juice (not pictured).

For lunch I had 2 slices of sesame Ezekiel bread w/ tahini. I thought I took a picture… apparently not because it is no where to be found on my camera…. hmmm
And I had Pacific’s roasted carrot soup which I bulked up w/ a carrot, 1 celery stock, 1/2 yellow pepper, tofu and some button mushrooms (sauteed in earth balance). It was really good!

I also had one mini So Delicious “ice cream” bar… =D

While at my mom’s I had some organic dark chocolate… sorry no photo! And I also had a glass of DHA silk when I got home.
I made Dreena Burton’s Goddess Garbanzos for dinner! I added 1 carrot, celery, 1/2 apple, and rasins to the mix. The bulk of the recipe is chickpeas, Annie’s goddess dressing and vegan mayo. Yum! I had it with half a whole wheat pita toasted w/ canola oil spray (the real stuff) and salt. I also had the other half of the apple.

And for dessert I made Dreena’s Chocolate mint Melties! OMG. They turned out fabulous. I had two w/ a glass of almond milk.

Tonight I really craved vegetables and Darren went out snowboarding so I had kind of an unconventional dinner. I just steamed up some broccoli, 2 carrots and kale then topped it with tomato sauce and 2 tbsp nutritional yeast.

Obviously this didn’t end up having many calories so I made a sandwich for the rest of my dinner. The sandwich was also kind of dessert- I made a “Peanut butter cup” sandwich! I toasted to slices of bread and spread PB on one side, honey on the other and sprinkled vegan chocolate chips in the middle! YUM

I also had lemon green tea.

Shortly before bedtime I got hungry again so I had a small bowl of muesli (again!) and a sprinkle of smart bran cereal (natures path) with almond milk. I can’t fall asleep if my tummy is growing
PS- the bowl is Sienna’s- she starting solids soon!

My lunch held me over really well today! When I did eventually get hungry I made myself a smoothie (sorry it looks gross).
Ingredients included:
- frozen raspberries
- banana
- kale
- vanilla hemp milk
- udo oil

And for dinner…. I got Darren to eat fake meat! And he liked it! I made sloppy joes with veggie “ground beef”.
- tbsp Earth Balance
- 1 med onion finely chopped
- 1 package veg ground “beef” (about 1 1/2 cups)
- 1 tbsp soy sauce
- 1/2 green bell pepper chopped
- 1 cup tomato sauce
- 1tsp dijon mustard
- 2 tbsp ketchup
- 1/2 tsp chili powder
- 4 burger buns (we we use Ezekiel)
- Heat oil/butter/butter spread in skillet, add onion and saute for 2ish minutes.
- Add “beef” and saute another 3 min.
- Add soy sauce and green pepper and saute another min or so. Add rest of the ingredients.
It was that easy! We also steamed up some carrots and broccoli (added EVOO and salt and pepper) for a simple side.


I had a “real berry” bar for dessert.
