Darren and myself went to see Juno tonight! We had his mom come over to babysit Sienna- it was a great movie. I highly recommend seeing it if you haven’t!

My lunch held me over really well but when I got hungry again the hunger really struck! I had some plain yogurt with ezekiel cereal (1/4 cup) and 2 kiwi’s.


For dinner I made chicken stir fry. I used (for 2 people):
- 1 chicken breast marinated in soy sauce and olive oil
- 2 carrots
- 1 celery stock
- 5 button mushrooms
- 1 head bok choy
- 3 green onions
- garlic
- 1/2 tsp olive oil
- soy sauce to taste
- 3 oz Soba noodles
- sprinkle of slivered almonds

I stir fried the chicken up first and then put it aside. I tossed the veggies in a 1/2 tsp oil first and then added it to the pan (reduces the chances of the oil oxidizing and reduces the amount of oil needed). Once veggies/garlic were soften I added the chicken and noodles. It was super fast and easy!

Before the movie we went to starbucks and I got a tall soy earl grey mistro (half tea, half steamed soymilk) and I added 2 packets of sugar in the raw.

After the movie I was pretty hungry so we went to the Good Earth around the corner and I had one of their awesome granola bars and a small soy chai latte.


I am pooped! Off to bed- good night!

Tonight was mushroom/olive pizza! We still have to pick up some meat for dinners so we resorted to a precooked meal . We eat Amy’s brand of pizza’s and usually have one in the freezer for nights like this! I also made sweet potato fries to go along with it and paired my meal with a mixed green salad.


I also just have to share a picture of my little sunshine!

Dessert was a chocolate chunk cookies from Planet Organic and a glass of unsweetened almond milk.

Tonight it was just me and Sienna so I needed to make some quick and easy for dinner (Sienna can be very needy in the evening!). I ended up having a weird combo- Asian stir fried veggies (bok choy, broccoli, zucchini and green onion), life choice chicken nuggets and Alexia sweet potato fries!

I made oatmeal, chocolate-banana “rice pudding” for dessert. I used Ruby Red Vegan’s recipe but subbed coco for carob (don’t have any) and vanilla Hemp milk for soymilk. It was very filling so I only ate about ½.

And here is Sienna in her high chair for the first time! She just started sitting all by herself unattended a week ago so I decided to set it up tonight! It was very exciting- she is getting so big!

I started to feel a tad hungry shortly after dinner and bedtime is not or a few hours so I asked Darren to make me a latte (unsweetened w/ skim) with our espresso machine (we got it for Christmas and I still have yet to use it myself!). I also had 4 Margaret’s Artisan Crisps, caramel-apple-almond flavor along with it. They remind me of thin biscotti so I dip them in my coffee! It was a nice way to end the day. Have a great night!

So I know I said it was like 50 below zero here in Calgary buut I still decided to have some ice cream! I found pumpkin flavored at one of my local health food stores and I had to have it! Its actually from a local ice cream shop in Cochrane (just outside of Calgary). YUM
