Vegetarian Dinner

My lunch held me over really well today! When I did eventually get hungry I made myself a smoothie (sorry it looks gross).

Ingredients included:

  • frozen raspberries
  • banana
  • kale
  • vanilla hemp milk
  • udo oil

And for dinner…. I got Darren to eat fake meat! And he liked it! I made sloppy joes with veggie “ground beef”.

  • tbsp Earth Balance
  • 1 med onion finely chopped
  • 1 package veg ground “beef” (about 1 1/2 cups)
  • 1 tbsp soy sauce
  • 1/2 green bell pepper chopped
  • 1 cup tomato sauce
  • 1tsp dijon mustard
  • 2 tbsp ketchup
  • 1/2 tsp chili powder
  • 4 burger buns (we we use Ezekiel)
  1. Heat oil/butter/butter spread in skillet, add onion and saute for 2ish minutes.
  2. Add “beef” and saute another 3 min.
  3. Add soy sauce and green pepper and saute another min or so. Add rest of the ingredients.

It was that easy! We also steamed up some carrots and broccoli (added EVOO and salt and pepper) for a simple side.

Shopping

Feb 9

We just got home from grocery shopping and ended up spending 200 bucks! Actually that is pretty good considering we bought some other things as well as food. I took pictures (click on picture to enlarge)!

We also bought a slice of berry cheesecake for Darren, and my dinner (you’ll that down bellow) and soy chocolate mint ice cream (Darren loves the stuff!). It was a lot of money but I sacrifice other things to buy organically.

I had a few walnuts before I made lunch (more than in the picture).

For lunch today I had an open face sandwich w/ mashed up butter beans mixed with olive oil and spices. I topped it with cucumber slices. I also had some mixed green salad w/ Annie’s Cesar dressing (which does have dairy- I’m going to try and cut down but not eliminate… yet).

I also had a serving of organic vegetable crackers (Darren was eating them..).

And 1 slice of grapefruit.

For dinner I had vegan lentil loaf with roasted vegetables and roasted potatoes from Planet Organic. I ate about half the loaf, all the veg and 2 potato wedges.

And of course I had dessert! I got a vegan apricot/nut cookie from planet and paired it with a glass of hempmilk.

I also had a homemade mocha a little bit later in the night (we used chocolate soymilk instead of milk).

Breakfast for Dinner?

Last night I ended up just having a very simple meal of eggs on toast! I used 2 slices sprouted grain bread, 2 organic omega 3 eggs, 2 slices back bacon and a few button mushrooms. I had grape tomatoes on the side (I was severely lacking in veg!!).

As soon as Darren got home from work we went out and got me a polar F4 heart rate monitor! I’ve wanted one for a while but they cost $110 here! Darren gets a discount through his new job through several sporting goods stores so I got mine for $75! Still pricey but it’s worth it. I had plans to use it today during a morning workout but I woke up to late! The only time I can really work out is 6 in the morning and in order to do that I have to get up at 5 so that I can pump (my milk makers!) before I leave. We have a gym in our condo so I have no excuse expect that I really like sleep… haha. I plan to start actively going as of tomorrow (there is no way I can go today now). Yay for working out!

Now on to today! I promise to actually POST today- I’m just hanging out at home… all day long… its minus 20!

For breakfast I had cereal- 1/2 cup Ezekiel (a serving) and 1/2 cup Smart Bran by Natures Path with almond milk. I topped it with a small banana and gogi berries. It was full of fiber.. I probably have already met my daily needs!

Juno!

Feb 6

Darren and myself went to see Juno tonight! We had his mom come over to babysit Sienna- it was a great movie. I highly recommend seeing it if you haven’t!

My lunch held me over really well but when I got hungry again the hunger really struck! I had some plain yogurt with ezekiel cereal (1/4 cup) and 2 kiwi’s.

For dinner I made chicken stir fry. I used (for 2 people):

  • 1 chicken breast marinated in soy sauce and olive oil
  • 2 carrots
  • 1 celery stock
  • 5 button mushrooms
  • 1 head bok choy
  • 3 green onions
  • garlic
  • 1/2 tsp olive oil
  • soy sauce to taste
  • 3 oz Soba noodles
  • sprinkle of slivered almonds

I stir fried the chicken up first and then put it aside. I tossed the veggies in a 1/2 tsp oil first and then added it to the pan (reduces the chances of the oil oxidizing and reduces the amount of oil needed). Once veggies/garlic were soften I added the chicken and noodles. It was super fast and easy!

Before the movie we went to starbucks and I got a tall soy earl grey mistro (half tea, half steamed soymilk) and I added 2 packets of sugar in the raw.

After the movie I was pretty hungry so we went to the Good Earth around the corner and I had one of their awesome granola bars and a small soy chai latte.

Decisions, Decisions

Feb 6

It took me a while to figure out what I wanted for lunch today. I knew it involved having butternut squash soup because I need to eat it up! I didn’t feel like a sandwich.. again so I had Mary’s crackers, a carrot, cucumber, and grape tomatoes with red pepper hummus. I only took a picture of the veggies, hummus and cracker plate because I’ve taken a few of the soup and it isn’t that exciting!
