Lunch

Oprah

Feb 5

Did anyone else watch Dr.Oz on Oprah? I loove Dr. Oz- today he was talking about aging (something I don’t have to worry about…yet!). He has an anti aging checklist that I think everyone should follow! I’m definably going to try and get my 4 glasses of green tea in- it is such an easy healthy thing to do!

I really felt like peanut butter so I had PB on toast for lunch. Nothing special… I also had an apple along with it and a glass of unsweetened almond milk. It hit the spot! I missed out on veggies though!

For snack I had some Ezekiel cereal with a drizzle of maple syrup and hemp milk. I was really hungry and forgot to take a picture! I will get better- I promise! lol

Monday, Monday

Feb 4

For lunch today I had soup and a sandwich… again! I have a box of butternut squash and tomato soup that need eating so you’ll see lots of soup!

I had a veggie sandwich with cuc + lettuce + red pepper hummus . I also had a carrot and some snap peas on the side.

My soup of choice was butternut!

I also had a Nature’s Path ginger cookie.

After Sienna  and I got home from Gymboree I was starving! So I had a small blood orange and plain yogurt w/ gogi berries and Ezekiel cereal.

Soup and Sandwich

Feb 1

Today for lunch I had the rest of the butternut squash soup I made the other night as well as a sandwich. I made it with two slices sprouted 16 grain bread and 5 slice tofuky (a serving) + 1 slice laughing cow light cheese + a bit of light mayo + spinach. I grilled the sandwich in a frying pan to make it nice and warm (no butter needed!). It was a wonderfully, warm lunch!

Savory Pancakes

Jan 31

So for lunch I decided I needed to have some of the spaghetti squash I made Wednesday- I found this recipe on Green Light Bites. I did everything the same except I omitted the peppers and added the rest of my butter beans (about 1/4 cup) and a bit of Parmesan cheese. They turned out really good. I had Imagine creamy tomato soup on the side and some more plain yogurt to dip! It was a lot of food!

I also had two more cookies for a snack.

Healthy Food- Quick Style

Jan 30

I am such a hungry girl! Around 10 I started to get hungry again so I decided to have some skim milk to hold me over until lunch. It did an OK job- I ate lunch around 12.

For lunch I used all convenience foods! I didn’t even realize until after I made it. Canned beans, frozen butternut squash and bagged spinach! The meal turned out really well. I used another one of my wraps and added some mashed butter beans (w/ EVOO and some spices), mashed butternut squash, Parmesan cheese, and baby spinach. I also had a red pear on the side. It was a really good lunch, and more relaxing than usual. Sienna is off at my mom’s for the day which means cleaning and cooking for me! I’m going to roast a spaghetti squash and bake some cookies in a bit… it can be difficult to bake when Sienna’s around. She always seems to want to eat within a few minutes of the oven timer going off!

I also thought I’d add another picture of Sienna- I can’t help but want to show her off! =)
