Sorry about the lack of posting- I’ve just been busy!
For breakfast today I just had two slices of sprouted grain toast with some cashew butter.

I also had an orange.

Nothing fancy! We really have to cut back on the amount of money we spend on groceries- its hard because I love food!! I’ve decided I will cook 3 meals for 4 people so that we have left overs and I will bake 1-2 times per week. If you have any money saving tips feel free to let me know!

I had the last of the Sweet Potato Lentil chili for lunch today- so sad! I just loved it and I don’t even really like regular chili! I also had some kashi crackers on the side.

I also had ants on a log! I used to eat this as a kid and I still love it. I subbed almond butter for PB (don’t have any) but it still turned out great! =)

Darren took Sienna over to his parents for a bit so I used to opportunity to bake! I really forgot how much I love baking- I used to do it all the time and for some reason stopped. I especially love making healthy treats- all of ED&BV’s are quite healthy. Even the indulgent ones (like Chocolate mint Melties) are full of things like Spelt flour, dark chocolate and unrefined sugar! Today I made the Double Carob Cashew Cookies although I didn’t have carob chips so I just used chocolate chips and I didn’t have cashew butter so I used almond. They still turned out great even though they were really Carob Chocolate Almond cookies!

I had 2 as a snack w/ some almond milk.

For dinner we just had a simple stir fry since we needed to use up our bok choy. I made a sauce out of almond butter (I sure eat a lot of this stuff!), braggs apple cider vinegar, garlic, soy sauce, honey and a bit of water. The stir fry consisted of carrots, celery, broccoli, bok choy, onion, and garlic plus some soba noodles!

I just had some chai tea w/ soymilk as my dessert (no sugar)!

Sorry about yesterday’s post- it is updated now!! Sienna was monkey last night and woke up and stayed awake at 4 am- she eventually went back to sleep at 630 so everyone slept in late this morning.
I woke up for the day around 8 and had half a banana (again!) w/ almond butter and wheat germ.

A bit later I had the rest of my Blueberry Carob pancakes- I’m going to have to make a new batch of pancakes now! I really like having some in the freezer. I had 5 small ones w/ Earth Balance, pear, maple syrup, and walnuts. It was probably the best way I’ve eaten them- the taste combo rocked!

This week went by so fast! I can’t believe it is the weekend already. I’d love to get some baking in at some point- I’ve rekindled my love! I just can’t get over how much I love Dreena’s book!!
I started my day w/ 1/2 a banana and almond butter- this combo is just dynamite. The banana was perfectly ripe too- not too little, not too much- perfect.

I also snacked on some trail mix while I made my breakfast- the original plan was to put the mix in my cereal… haha!

I made Quinoa flakes again but this time I made them with DHA Silk soy milk- I really like these flakes. I think it’s important to switch up the grains we eat. I find it is pretty easy to only eat wheat and oats (which both contain gluten)- there are so many options out there! I whipped the other 1/2 of the banana into the flakes while cooking (I got this idea from Kath) and topped it w/ walnuts and maple syrup. Yummerz.

I had leftover chili again! It is so good I can’t get over it- I still have a little bit left over so it will be making one more appearance!

I had two slices of sprouted grain bread w/ 1/2 an avocado on the side. I just love the combo of chili and avocado!

I also had some of this organic dark chocolate bar from Bernard Callebaut (my younger sister works there and got it for me!) later on in the day.

We drove out to Cochrane (a town 20 minutes from our house) and went to Mackay’s Ice Cream for fun! I forgot my camera so I don’t have a picture but I got the mango sorbet in a cup- just picture… orange sorbet! =)
I was pretty full from lunch and treats so dinner was pretty simple tonight. I just made some whole wheat pasta (4 oz) w/ pureed butternut squash, Earth Balance, salt and a little organic cheddar cheese (a bit of a splurge!).

Today’s a rare day guys- its February 29! I can’t help but think of all the women giving birth today.. it’s kind of a confusing birthday for their kids! =) Today I had left over Blueberry Carob Pancakes from yesterday- they were still great!
But first I had 1/2 a huge banana w/ almond butter when I woke up.

Then I toasted some pancakes and ate them with some almond butter dip (almond butter, soy yogurt, applesauce, agave nectar, cinnamon- inspired by ED&BV’s cashew dip). I also had an apple that I also dipped in the sauce.

For lunch I had more leftovers- the Sweet Potato Chili I made from ED&BV. I topped it with 1/4 an avocado again and had Mary’s crackers on the side.

I also had cucumber and 1/2 a yellow pepper w/ dijion tarragon dressing.

For a sanck I had one of each cookies that I made. Plus a glass of DHA Silk soy milk.

Darren wasn’t home for dinner (he works one night a week serving) so I just had left over Goddess Gorbanzos w/ a slice of sprouted grain toast and Pacific’s Creamy Roasted Carrot soup. I also made roasted broccoli (olive oil and fresh garlic)- I love roasted veggies!!

I had 2 more Super Charge Me! Cookies for dessert w/ almond milk. I just love cookies…. =)
