Late Dinner!

Feb 5

We didn’t end up eating dinner until 9! Sienna was at my mom’s today so when Darren got home from work we had to rush out and do errands before we had to pick her up. It seems like there is never enough time in the day!

I had a smoothie before we left to go shopping. I made it with frozen raspberries, cranberries, hempmilk and udo oil (sorry I took a sip before I took a pic!).

For dinner I made BLT’s… sort of. I used back bacon stuffed it in a pita with canola mayo and lettuce. I had grape tomatos on the side.

Oprah

Feb 5

Did anyone else watch Dr.Oz on Oprah? I loove Dr. Oz- today he was talking about aging (something I don’t have to worry about…yet!). He has an anti aging checklist that I think everyone should follow! I’m definably going to try and get my 4 glasses of green tea in- it is such an easy healthy thing to do!

I really felt like peanut butter so I had PB on toast for lunch. Nothing special… I also had an apple along with it and a glass of unsweetened almond milk. It hit the spot! I missed out on veggies though!

For snack I had some Ezekiel cereal with a drizzle of maple syrup and hemp milk. I was really hungry and forgot to take a picture! I will get better- I promise! lol

Monday, Monday

Feb 4

For lunch today I had soup and a sandwich… again! I have a box of butternut squash and tomato soup that need eating so you’ll see lots of soup!

I had a veggie sandwich with cuc + lettuce + red pepper hummus . I also had a carrot and some snap peas on the side.

My soup of choice was butternut!

Savory Pancakes

Jan 31

So for lunch I decided I needed to have some of the spaghetti squash I made Wednesday- I found this recipe on Green Light Bites. I did everything the same except I omitted the peppers and added the rest of my butter beans (about 1/4 cup) and a bit of Parmesan cheese. They turned out really good. I had Imagine creamy tomato soup on the side and some more plain yogurt to dip! It was a lot of food!

Toast- Take 2

Jan 31

When I woke up this morning I felt really light headed so I grabbed a small banana to nosh on.

About 45 minutes later I decided to make some breakfast- I felt like toast again but I wanted to do something I hadn’t done in a while… French toast! I made it with 2 slices of sprouted 16 grain bread and made the batter with a combo of ¼ cup egg white + 3 tbsp hemp milk (any milk will do) + ¼ tsp vanilla + cinnamon. I cut my bread into strips (more fun that way!) and dipped both sides into the batter. I then paced the strips on a hot pan with canola oil spray; it didn’t take long at all! I topped it all with 1 tbsp real maple syrup, defrosted raspberries and some almond slivers! I put some plain yogurt on the side and ended up using it as a dip! I also had some green/black chai tea w/ almond milk.

I got hungry a few hours later so I had a gala apple w/ some almond butter.
