I still lurk on other blog but I felt like I needed a big break from my own. I hope to get back into it soon! I really do love the blogging community :-). Sienna is almost 8 months old now! I can&#8217;t believe how time fly&#8217;s- her latest accomplishments include standing on her own for a few seconds, waving, clapping, and crawling up stairs!</p>

<p>I haven&#8217;t been taking too many pictures either but I do have one of the awesome muffins I baked a few days ago.<strong> Zucchini Spelt </strong>from ED&amp;BV- they were really more like banana muffins and they were super moist and delicious!</p>

			<content:encoded><![CDATA[<p>Good morning! I hope everyones day is off to a great start. Spring is in the air!</p>
<p>This morning I had overnight oatmeal- I put 1/2 oats and 1/2 almond milk in a bowl and left it overnight in the refrigerator. In the morning I had oatmeal to go!  You can heat it up or leave it cold, I choose the latter. Its a nice way to have oatmeal in warmer weather.</p>
<p>I topped my oats with fresh strawberries and banana, a few crushed pecans and a drizzle of agave nectar.</p>

			<content:encoded><![CDATA[<p>Lunch was a little bit weird today- we had no food! I ended up making ED&amp;BV&#8217;s tamari chickpeas since I did have all the ingredients for it. I had no idea what I was going to have with it- the only fresh produce we had was some baby carrots and I didn&#8217;t really feel like having them so I went into the freezer. We had some frozen sweet potatoes and that called out to me! I steamed them up and mixed it with the chickpeas! It was good! I added a smidgen of soy sauce as well.</p>

<p>We went grocery shopping as soon as Darren got home. This is what we came back with (we still need to get some more produce) and sorry for messy display- I was in a hurry.</p>

<p>I was so hungry by the time we got home (around 7) and I almost just had cereal for dinner. Then I remembered Kath&#8217;s lunch so I made a quick pasta salad. I used Rye spiral pasta, a sauteed zucchini, some black olives, the rest of my chickpeas and topped it with&#8230;. tzatziki! I love tzatziki and Darren got some for his pita&#8217;s- I caved and used it as my dressing&#8230;. it was SO good. Thanks Mr. Cow =)</p>

			<content:encoded><![CDATA[<p>So I made some steel cut oats this morning and when I took it of the burner I accidentally turned it to &#8220;max&#8221; instead of off. Well I left the oats to sit of a minute while I answered the phone and a few minutes  later the smoke alarm went off! It scared the living day lights of out me! Not to mention Sienna was having a nap and I was worried it would wake her up (isn&#8217;t that what alarms are suppose to do?). Luckily she didn&#8217;t&#8230; what an ordeal!</p>
<p>On to breakfast- I started with a cup of green tea (I have had 2 this morning) some <a href="http://www.genuinehealth.com/english/pbn/index.php?id=8&amp;section=162">greens+</a> mixed with water. Isn&#8217;t it a neat picture? You can see the steam!</p>

Today I was lucky- my sister came by and entertained Sienna while I cooked dinner. I made Bean &amp; Corn Tortilla Lasagna w/ Avocado (again from you know where&#8230;.).</p>

			<content:encoded><![CDATA[<p>So yet again I am apologizing for the lack of posting. Sienna has been working me hard these past few days. She is on the move! Not quite crawling but with the rolling and creeping she can defiantly move! Needless to say- I have to constantly be watching her! Any time I have a free moment I generally have 10 million things to do (like take a shower!) so blogging gets pushed aside. I&#8217;m going to work on keeping it up!</p>
<p>Thanks to everyone who gave me ideas/tips on how to cut my grocery budget. I find just bringing a calculator and adding as you put things in the cart really helps! Unfortunately it means trying less fun products and getting more &#8220;staples&#8221; to cook and bake with so I actually have to make things to eat! I actually like this- its nice to have things like homemade soup and cookies on hand.</p>
<p>On to breakfast- this morning I tried something out. I had a fruit and nut plate to start my day (since fruit should really either be eaten alone or with nuts). I had one banana, one apple (small), 1/3 cup raw walnuts and after I took the picture I added some cinnamon! It was so good! The fruit were perfect and went so well with the nuts- the cinnamon really enhanced the flavors.  I will defiantly be doing this more often.</p>

<p>Nothing fancy! We really have to cut back on the amount of money we spend on groceries- its hard because I love food!! I&#8217;ve decided I will cook 3 meals for 4 people so that we have left overs and I will bake 1-2 times per week. If you have any money saving tips feel free to let me know!</p>

<p>I also had <strong>ants on a log</strong>! I used to eat this as a kid and I still love it. I subbed almond butter for PB (don&#8217;t have any) but it still turned out great! =)</p>

<p>Darren took Sienna over to his parents for a bit so I used to opportunity to bake! I really forgot how much I love baking- I used to do it all the time and for some reason stopped. I especially love making healthy treats- all of ED&amp;BV&#8217;s are quite healthy. Even the indulgent ones (like Chocolate mint Melties) are full of things like Spelt flour, dark chocolate and unrefined sugar! Today I made the Double Carob Cashew Cookies although I didn&#8217;t have carob chips so I just used chocolate chips and I didn&#8217;t have cashew butter so I used almond. They still turned out great even though they were really Carob Chocolate Almond cookies!</p>

<p>For dinner we just had a simple stir fry since we needed to use up our bok choy. I made a sauce out of almond butter (I sure eat a lot of this stuff!), braggs apple cider vinegar, garlic, soy sauce, honey and a bit of water. The stir fry consisted of carrots, celery, broccoli, bok choy, onion, and garlic plus some soba noodles!</p>
