Happy Leap Year!
Today’s a rare day guys- its February 29! I can’t help but think of all the women giving birth today.. it’s kind of a confusing birthday for their kids! =) Today I had left over Blueberry Carob Pancakes from yesterday- they were still great!
But first I had 1/2 a huge banana w/ almond butter when I woke up.
Then I toasted some pancakes and ate them with some almond butter dip (almond butter, soy yogurt, applesauce, agave nectar, cinnamon- inspired by ED&BV’s cashew dip). I also had an apple that I also dipped in the sauce.
For lunch I had more leftovers- the Sweet Potato Chili I made from ED&BV. I topped it with 1/4 an avocado again and had Mary’s crackers on the side.
I also had cucumber and 1/2 a yellow pepper w/ dijion tarragon dressing.
For a sanck I had one of each cookies that I made. Plus a glass of DHA Silk soy milk.
Darren wasn’t home for dinner (he works one night a week serving) so I just had left over Goddess Gorbanzos w/ a slice of sprouted grain toast and Pacific’s Creamy Roasted Carrot soup. I also made roasted broccoli (olive oil and fresh garlic)- I love roasted veggies!!
I had 2 more Super Charge Me! Cookies for dessert w/ almond milk. I just love cookies…. =)

I always wonder how people celebrate their birthdays, if they’re born today - they get to choose whether or not they want to celebrate it on 28th or March 1st, when it’s NOT a leap year! haha. I’m just glad that my birthday is on a day that occurs every year :0)
Oooh, I LOVE your idea about toasting the pancakes; and that dipping sauce sounds divine!! Reminds me a bit of the nut-butter-banana pudding that I make :0)

About 2/29… I have a friend whose b-day is today! She actually turns 6yrs old (times 4 of course). She chooses to celebrate it on 2/28 usually because it is still in the same month and feels “right.”
Jenna- I always have a small snack when I first wake up because I am alway starving! I think that has to do with breastfeeding…haha! Sometimes I do workout and if I do I have a little more than fruit- I always intend to go workout but I have been sleeping through my early alarm! I also try and have a piece of fruit on an empty stomach- then I have breakfast about an hour later. Plus that way I can think about what I want to eat!
Thanks everyone for the nice comments! Kay- I think if I were born on feb. 29 I would celebrate the 28th too- after all Feb. would be my birthday month not march… I think it is such a special day to have a b-day.
