Sorry for the late post- after I ate lunch Sienna woke up from her nap and we went to my mom’s. I didn’t have time to blog! When I got home I made dinner and then Darren’s mom came over- I took the opportunity to bake cookies!
Lets start with my mid morning snack- I had 1/4 cup walnuts. I also had a “greens” drink w/ a bit of juice (not pictured).

For lunch I had 2 slices of sesame Ezekiel bread w/ tahini. I thought I took a picture… apparently not because it is no where to be found on my camera…. hmmm
And I had Pacific’s roasted carrot soup which I bulked up w/ a carrot, 1 celery stock, 1/2 yellow pepper, tofu and some button mushrooms (sauteed in earth balance). It was really good!

I also had one mini So Delicious “ice cream” bar… =D

While at my mom’s I had some organic dark chocolate… sorry no photo! And I also had a glass of DHA silk when I got home.
I made Dreena Burton’s Goddess Garbanzos for dinner! I added 1 carrot, celery, 1/2 apple, and rasins to the mix. The bulk of the recipe is chickpeas, Annie’s goddess dressing and vegan mayo. Yum! I had it with half a whole wheat pita toasted w/ canola oil spray (the real stuff) and salt. I also had the other half of the apple.

And for dessert I made Dreena’s Chocolate mint Melties! OMG. They turned out fabulous. I had two w/ a glass of almond milk.

Sorry I’ve been MIA lately- I’m back. I’ve just been busy and sooo tired. Any free time I have I want to use to rest! Anywhoodles I’m back ta blogging!
This morning when I got up I had some fresh pineapple. I loooove pineapple and I was so excited to get some! It was the perfect ripeness too!

For breakfast I had Quinoa flakes with almond milk.

I topped it with trail mix and agave nectar. Some banana was cooked in as well!

I really like Quinoa flakes- they are quite different than oats but similar at the same time! Not chewy at all though. I let Sienna try a bite…. but of course she spat it back at me- she is not a fan of solids. Boob milk is still her favorite! =)

For breakfast this morning I switched it up and had some fruit/nut manna bread by Natures Path. I spread almond butter on top and had soy yogurt and apple sauce with agave and cinnamon on the side.

And guess what I bought last night! Eat, Drink and Be Vegan! I’m so excited to try the recipes!! Thanks VeggieGirl for the recommendation!

Sienna matched the cover in her new spring outfit- how cute!

For dinner I made this recipe- I basically cut it in half, added carrots, and omitted the cilantro, sesame seeds, green onion and chicken.

I had two organic, vegan “oreos” for dessert w/ unsweetened almond milk. YUM.

I have some new favorites! I bought a great new dressing (dijion-tarragon) which I had with carrots and celery for a snack.

The veggies didn’t soothe my hunger so I ate lunch shortly after. I had a whole wheat pita with vegan mayo, spinach, more dressing and veganRella! I found a non dairy cheese I like! I microwaved the pita w/ the “cheese” for about 40 sec before adding the spinach and dijion-tarragon dressing. It was really good. I also had cherry tomatoes on the side.

After lunch I felt like I needed something else- I need to make sure I eat enough because breastfeeding burns a lot of calories. Anyways I remember the soy ice cream I bought yesterday! It was turtle trails- I had 1/3 cup.

While shopping (after vaccines) I had a pecan pie larabar. And when I got home I had a glass of hempmilk.

I still feel hungry so I might have some fruit…. see you after dinner!
