Sunshine!

The sun is shining! The weather is warming up here in Calgary- hopefully we don’t get another 50 below cold episode! This morning I had steel cut oats again (warmed in the microwave w/ a bit of almond milk). I topped it with almond butter, sliced almonds, maple syrup and banana.

  1. I’m jealous of your sunshine! We are about to get 6-9 inches of snow here in Iowa! It started about an hour ago, and it’s coming down quick! Hope your’e having a fabulous Tuesday!

  3. You oats look so good! How do you cook them in advance without them getting hard? How many days worth do you cook at a time?

    Your breakfast looks MARVELOUS!!! A bowl overflowing with so much goodness (almond-milk is what I drink in the morning as well! I save my hempmilk for the afternoon, haha).

    Note to self- avoid Iowa, head to Florida! I would love to be able to lay by the pool in February!

    Julie- I cook about four servings in advance- I used 41/2 cups water to 1 cup oats. they turned out great and last about a week in the fridge. I have never had any issues with them getting hard… maybe try more water?
