Lunch, Dinner and Groceries
Mar 11Lunch was a little bit weird today- we had no food! I ended up making ED&BV’s tamari chickpeas since I did have all the ingredients for it. I had no idea what I was going to have with it- the only fresh produce we had was some baby carrots and I didn’t really feel like having them so I went into the freezer. We had some frozen sweet potatoes and that called out to me! I steamed them up and mixed it with the chickpeas! It was good! I added a smidgen of soy sauce as well.
I also had an apple w/ peanut butter.
For a mid afternoon snack I had some hot chocolate made with almond milk, light coconut milk, agave and coco powder.
We went grocery shopping as soon as Darren got home. This is what we came back with (we still need to get some more produce) and sorry for messy display- I was in a hurry.
I was so hungry by the time we got home (around 7) and I almost just had cereal for dinner. Then I remembered Kath’s lunch so I made a quick pasta salad. I used Rye spiral pasta, a sauteed zucchini, some black olives, the rest of my chickpeas and topped it with…. tzatziki! I love tzatziki and Darren got some for his pita’s- I caved and used it as my dressing…. it was SO good. Thanks Mr. Cow =)
I had fresh strawberries (!!!) and 1/2 a banana for dessert.
