Vegetarian Dinner
My lunch held me over really well today! When I did eventually get hungry I made myself a smoothie (sorry it looks gross).
Ingredients included:
- frozen raspberries
- banana
- kale
- vanilla hemp milk
- udo oil
And for dinner…. I got Darren to eat fake meat! And he liked it! I made sloppy joes with veggie “ground beef”.
- tbsp Earth Balance
- 1 med onion finely chopped
- 1 package veg ground “beef” (about 1 1/2 cups)
- 1 tbsp soy sauce
- 1/2 green bell pepper chopped
- 1 cup tomato sauce
- 1tsp dijon mustard
- 2 tbsp ketchup
- 1/2 tsp chili powder
- 4 burger buns (we we use Ezekiel)
- Heat oil/butter/butter spread in skillet, add onion and saute for 2ish minutes.
- Add “beef” and saute another 3 min.
- Add soy sauce and green pepper and saute another min or so. Add rest of the ingredients.
It was that easy! We also steamed up some carrots and broccoli (added EVOO and salt and pepper) for a simple side.
I had a “real berry” bar for dessert.

I LOVE veggie sloppy joes! If you can believe, I actually got all the ingredients to make those TOO this week and I might make them tonight! I love how we are so alike! haha!
yum ym, those really do look good! I’ve never heard of the “Real Berry” bars, where do you find those?
oh and ps—isnt it funny that guys surprise themselves when trying something like that?? I made ryan soy burritos once and he NEVER knew the difference!!!!! They are just against the idea..but then when they try it they realize its actually pretty good!

do you have a special blender? i would think kale would be hard to liquify in a regular blender, but i have some i need to use up and would love to give the smoothie a try!

Kelly T- I don’t have a special blender- just a regular black and decker! It is hard to get the kale to completely liquefy but in the and the tiny chunks aren’t too noticeable. It doesn’t add a strong taste to smoothies so its a great way to get your greens!
